Ingredients
- 3 very ripe bananas, peeled (~1 1/2 cups mashed)
- 1/3 cup butter, melted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
Directions
- Heat oven to 350° F.
- Butter an 8x4 inch loaf pan.
- In a mixing bowl, mash bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Pour the batter into the prepared loaf pan.
- Bake for 55 - 65 minutes, or until a toothpick inserted into the middle comes out clean.
