Banana Bread

Ingredients

  • 3 very ripe bananas, peeled (~1 1/2 cups mashed)
  • 1/3 cup butter, melted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Directions

  1. Heat oven to 350° F.
  2. Butter an 8x4 inch loaf pan.
  3. In a mixing bowl, mash bananas with a fork until smooth.
  4. Stir the melted butter into the mashed bananas.
  5. Mix in baking soda and salt.
  6. Stir in the sugar, beaten egg, and vanilla extract.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55 - 65 minutes, or until a toothpick inserted into the middle comes out clean.
