Angel Pie

Ingredients

Crust

  • 4 egg whites
  • 1 1/3 cups sugar
  • pinch of salt
  • 1 tsp. vinegar
  • 1 tsp. vanilla

Filling

  • 4 egg yolks
  • 1/2 cup sugar
  • 1 lemon juice & rind
  • 1 1/2 cups whipped cream

Directions

Crust

  1. Heat oven to 300 - 325° F.
  2. Put whites of 4 eggs in bow, 1 1/3 cups of sugar, pinch of salt and beat until stiff.
  3. Add 1 tsp. vinegar & 1 tsp. vanila. Beat a little longer.
  4. Put batter in 9x13 pan
  5. Bake slow in oven for 1 hour

Filling

  1. Stir 4 egg yolkes, 1/2 cup sugar, juice & rind of 1 lemon until thick, sitring constantly
  2. Add 1 1/2 cups of whipped cream on top.
